"Shiitake Happens" Mushroom Pâté
This shiitake mushroom pâté is the recipe you want when you have an overabundance of shiitakes on your hand. A great way to spread your bounty.
- 1-2 lbs fresh shiitake mushrooms
- olive oil or butter
- 1-2 cloves garlic chopped
- 1/4 cup olive oil
- 1 handful walnuts
- salt to taste
- Chop mushrooms. Dry sauté them until they begin to brown. Add a splash of olive oil or butter, cooking until golden and tasty. Add salt and/or fresh herbs as desired.
- Transfer to a food processor. Add garlic, olive oil, and walnuts. Process until texture becomes smooth and ingredients are well mixed. Add more oil if necessary to achieve your desired consistency. Salt to taste and serve with crackers or crusty bread.
For a creamier version, add 2-3 tbsp chèvre or other soft cheese
