Fettuccine with a creamy mushroom sauce

Looking for a delicious dinner idea that uses your fresh, homegrown Cascadia Mushrooms? Try this delicious fettuccine in creamy mushroom sauce.

  • Lightly salt a pot of water and bring to a boil. Add 8 ounces of fettuccine pasta and cook for 8 to 10 minutes until pasta is al dente. Drain water.
  • In a medium saucepan, heat one tablespoon of extra virgin olive oil and cook 1 chopped shallot and 1 chopped clove of garlic until transparent. Stir in 4 ounces of chopped, fresh oyster mushrooms and cook until tender. Add one half cup of heavy cream and salt and pepper to taste. Continue to cook and stir until thickened.
  • Toss mushroom sauce with cooked pasta, then serve and enjoy!
